Description
A comforting, made from scratch casserole with seasoned ground beef, tender potatoes, and a creamy homemade cheese sauce no canned soup required.
Ingredients
1 lb lean ground beef
1 large yellow onion, finely diced
3 cloves garlic, minced
3 tbsp all-purpose flour
1½ cups beef broth
1 cup whole milk
1 tbsp Worcestershire sauce
1 tsp smoked paprika
½ tsp dried thyme
4 medium russet potatoes (1.8 lbs), thinly sliced (⅛-inch thick)
2 cups sharp cheddar cheese, shredded (divided)
¼ cup grated Parmesan cheese
2 tbsp unsalted butter
1 tbsp olive oil
1 tsp salt (divided)
½ tsp black pepper (divided)
Fresh chives, chopped (for garnish)
Instructions
Preheat & Prep: Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook Beef: In a large skillet, heat olive oil over medium-high. Add ground beef; cook until browned (5-6 min). Add onion and garlic; sauté 3 min. Drain excess fat.
Make Sauce: Reduce heat to medium. Melt butter into beef mixture. Sprinkle flour over top; stir 1 min. Gradually whisk in beef broth, milk, Worcestershire, paprika, thyme, ½ tsp salt, and ¼ tsp pepper. Simmer 3-5 min until thickened. Remove from heat.
Layer Potatoes: Arrange ½ the potato slices in baking dish. Season with ¼ tsp salt and ⅛ tsp pepper. Top with ½ the beef sauce and 1 cup cheddar cheese.
Repeat Layers: Add remaining potatoes, season lightly, then cover with remaining beef sauce. Sprinkle remaining 1 cup cheddar and Parmesan over top.
Bake Covered: Tightly cover dish with foil. Bake 45 min.
Finish Uncovered: Remove foil; bake 15 min more until potatoes are fork-tender and top is golden.
Rest & Serve: Let stand 10 min. Garnish with chives before serving.
