Ingredients
1 cup (150g) roasted Hatch green chiles, chopped (fresh or canned)
½ cup (75g) diced white onion
1 garlic clove, minced
1 tbsp (15ml) vegetable oil
¼ tsp cumin
Salt to taste
1.5 lbs (680g) ground beef (80/20 blend)
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tbsp (15ml) Worcestershire sauce
Salt and black pepper
4 slices pepper jack cheese
4 brioche burger buns, toasted
2 tbsp (30g) mayonnaise
1 cup shredded iceberg lettuce
1 tomato, sliced
Instructions
Sauté Chiles: Heat oil in skillet over medium. Sauté onion for 3 mins until translucent. Add garlic, green chiles, and cumin; cook 5 mins until fragrant. Season with salt. Set aside.
Mix Patties: Gently combine beef, garlic powder, onion powder, smoked paprika, Worcestershire, 1 tsp salt, and ½ tsp pepper. Form into four ¾-inch thick patties. Press thumb in center to prevent bulging.
Cook Patties: Preheat grill/stovetop to medium-high. Cook patties 4 mins per side for medium (Doneness Test: 160°F/71°C internal temp).
Melt Cheese: Top each patty with cheese slice in last minute of cooking. Cover to melt.
Toast Buns: Lightly toast buns cut-side down on grill/skillet for 1 min until golden.
Assemble: Spread mayo on buns. Layer lettuce, tomato, patty, and ¼ cup green chile mixture. Serve immediately.
